Izasa Sushi is born

Towering peaks, deep valleys… our base is at the foot of Okuyoshino and Odaigahara.
It was there that we created sasamaki sushi, using bamboo leaves that grow abundantly on Odaigahara.
When you gently unwrap the bamboo leaves, the aroma tantalizes your appetite, and the flavors of the salmon and rice create an exquisite harmony…

The then head priest of Todai-ji Temple, Kōshō Shimizu, was so impressed by this sushi that he named it “Izasa Sushi,” after the legend of Izasa-ō, a god from the region who is depicted as a boar adorned with bamboo grass. He even provided the calligraphy for the dish.
Thus, a famous local sushi dish was born, with a name and flavor that truly symbolizes the magnificent Ōdaigahara.
